Crispy and aromatic skin, juicy, soft meat, and intense garlic and spice flavors that linger on the palate…. This restaurant’s signature dish, honetsukidori (or chicken on the bone), is a local specialty of Kagawa Prefecture that comes second only to Sanuki udon noodles. They say that by seasoning whole chicken thighs with salt, pepper, spices, and so on, and slowly grilling them over a flame while applying fat, the tastiness of the meat is intensified. Roughly chopped raw cabbage is served together with the chicken, and if you dip the cabbage into the extremely tasty fat that drips from the meat you’ll feel like you could keep on eating it forever. In addition to “hina ”, or young chicken meat (see photo), the shop also serves “oya”, or mature chicken meat, which has a characteristically firm texture. The shop, which has English- and Korean-speaking staff, is popular with foreign tourists as it makes it easy to enjoy this local specialty in an authentic manner.
