The view is idyllic: islands large and small dot the sea while oyster farms float between them. With the sea breeze we cross the bridge to Kashira-jima Island. Amid the overhanging eaves of the fishermen’s houses, a retro structure peeps out. Here sits the chef’s table-only restaurant established by a famous chef of Japanese-Italian in culinary field, Chef Makio Terada. Each day starts early with a visit to the fish market, where Terada selects only the best ingredients as he chats with the fisher folk. He transforms the day’s haul into sublime Italian dishes with a combination of reliable skill and a finely-honed aesthetic sense. On a given day, the fish course consists of a beautiful flounder, his specialty risotto and tiger prawns that are in season.
