“Irasshaimase (“welcome to my shop”)! Why don’t you try our lovely crab?” Friendly, spirited cries greet any visitor to the stalls out the front of the Sakaiminato wholesale fish market, one of the top fish markets in the country. In September, snow crabs take over the market, while in summer and autumn, “white” squid, “ghost” shrimp and other uncommon delicacies make an appearance. Kaiyotei restaurant in the market serves up dishes using ingredients that have just crossed the wharf. The flesh of the white squid is fine, translucent and melts in the mouth. The meat of the ghost shrimp quivers pleasingly on the tongue and its rich, sweet taste spreads across the palate.
