Facing the Seto Inland Sea, Onomichi is known as a town of hilly roads, temples, and cats, but there is also a sushi shop in this town worth of respect. Sit down on the special seating at the counter, and you’ll find yourself watching the fine knife-work of the head sushi chef. The neta, the fish toppings, are mainly sourced from the Seto Inland Sea; many are firm-bodied small white fish, and you can hear the excellent judgements of the head chef regarding the glossy-skinned fish lined up before your eyes. As for the menu, we recommend a plate of Setouchi Nigiri, made with neta caught only in the sea near Onomichi. The shop uses Onomichizousu vinegar as sushi vinegar, essential for making sushi-rice, and the rice and soy sauce are also carefully selected from the area around Onomichi.
