Savour ramen with the taste of Shodoshima, an island in the Seto Inland Sea, in Okayama. This restaurant boasts a soup made using a tonkotsu (pork belly and bone) and torigara (chicken bone) base with seafood dashi stock made with dried Japanese anchovies caught in the Seto Inland Sea, and further flavored with Yamaroku soy sauce from Shodoshima. Their original soft chuboso (medium) noodles are stirred into the soup, and with one bite the sweetness and depth of the soy sauce and rich taste of the seafood dashi stock spreads in your mouth. A second serving of noodles is free “to your heart’s content,” so you can enjoy this ramen until you are full. You can also order their Shima-meshi (“Island Rice”) for an extra 100 yen, with irikobushi (dried fish) and Shodoshima tsukudani (ingredients simmered in soy sauce and mirin); we recommend that you add it to your ramen and enjoy.(This information is as of June 2019)
