The careful selection of high-quality wagyu from all over Japan includes the local brand of meat known as “Olive Beef.” The restaurant seeks out and stocks the market’s finest meats, and serves up freshness in which you can taste the natural flavor of the beef. The Special Boneless Short-Rib and lean meat are popular cuts among foreign tourists. The lightly-grilled, thin-sliced, top-quality lean meat is famed for its excellent meat flavor that will surprise you with its depth. It’s best to grill the meat just enough so the fat begins melting and the surface turns a slightly burnt color. The Japanese sauces and seasonings, including the original miso sauce and chopped wasabi, as well as the mildly tangy ponzu sauce, make the umami meat flavor stand out even more.
