Here, the casual-style Tottoyaki (from 429 yen) is popular, in which customers grill their own fresh, locally-raised chicken and seasonal ingredients on an iron plate imbeded in the table. In order to bring out the umami flavor naturally in the meat, which is stocked from valuable locally-raised chickens such as olive-fed Jidori chickens. It is seasoned simply with salt, pepper, and garlic powder.
